Pu-erh tea, known as “black tea ” in the Far East, originates from the Chinese province of Yunnan, and got its name from the market where it was first developed. Pu-erh tea is post-fermented, meaning the tea leaves go through a microbial fermentation process after they are dried and rolled, causing the leaves to darken and change in flavor.
